Hello. I claimed bankruptcy in January of 2007 and have now been discharged. We did authorize our trustee to do our 2007 taxes (and keep our 2007 taxes). So this means that they will keep our taxes up to the date of bankrutpcy, correct?

If you authorized your trustee to do your taxes you have likely done so for both the pre and post bankruptcy period.

This is standard practice every person who files a bankruptcy is required to turn the taxes over to their trustee for the year of bankruptcy and failure to do so will result in your discharge being overturned.
